Climate action: Try a plant-based diet

Eating a vegan diet can be an important part of the solution to climate change. I finally started a plant based diet when I learned to use chia seeds in baking and gave up my last animal product — eggs. I didn’t need to eat meat, eggs or dairy. I’m far healthier now eating cruciferous veggies, greens, seeds, nuts, fruit and the cornucopia of foods that make up a plant-based diet.

The Seattle Public Library has a wide selection of books that educated and helped me. Check out “Comfortably Unaware: What We Choose to Eat Is Killing Us and Our Planet,” “The VegNews Guide to Being a Fabulous Vegan,” “The China Study” and “Meatonomics.”

Flying to Scotland won’t solve the global depletion problem. But everyone can make a difference today. Try plant-based eating.
